Ricotta and Spinach Calzones

Alright ladies and gentlemen!!  
This was my favorite dish so far.  Not to be modest but the calzone tasted restaurant quality.  The spinach mixed with the cheeses was out of sight!! 

Oh yeah, my homemade red sauce was so much fun to make!!
The big key difference from the recipes is I sautéed the garlic in red wine with a touch of olive oil first.  I also added 10 cloves of fresh garlic.
The key for the calzones is to bake at 500 degrees for 8 minutes, egg wash, add cheese on top, bake for another 7 minutes.  
Bowls out, Apron On, Wine in Hand!!!
