Eggplant Parmesan

CHEEESSSSEEE!!  If you love cheese you will love this dish.  The big key to Eggplant Parmesan is you need to deep fry your eggplant first then cook it in the oven.

This will give you that crunch you want.  I don’t like squishy eggplant.  Be very liberal with your sauce and cheese. This is also a great meal the next day.  One of my favorite dishes.  I love Italian food.  The only downfall is you might get some GAS so have the Tums handy!
