Alfredo Spaghetti Squash

This is an awesome alternative to pasta.   I love making spaghetti squash.  The big key here is don’t get too big of a squash and be liberal when adding olive oil to the rind.   It takes about 1 hr to cook so have your beverage handy.

I made a nice alfredo sauce.  I added fresh basil, champagne tomatoes, and a faux sausage.  Oh yeah, nice mushrooms to finish off the dish.   A nice Merlot can complete this meal.
