Easy Bake Ritz Encrusted Cod

I love baked fish.  In this case, I used “caaahd”… My accent comes out sometimes.  I used a nice fresh cod.  I actually made this by accident.  I didn’t have any breadcrumbs so I used Ritz crackers.

I LOVE IT.  It is lighter and has that additional buttery flavor.  I love cooking fish with olive oil.  Be generous with the oil.  The flavor will POP.   I added broccoli and cuscus.  Pick your favorite fish.  Add the crackers and tip your glass and enjoy.
